Understanding Oxidation and Antioxidants

Oxidation causes oil to become rancid, peeled apples to turn brown, and iron to rust. Oxidative stress occurs when the production of harmful molecules called “free radicals” are beyond the protective capability of the body’s own antioxidant defenses. Free radicals are chemically active atoms or molecular fragments that have a charge due to an excess or deficient number of electrons. Free radicals are highly unstable since they have one or more unpaired electrons.
They act as scavengers in your body, grabbing or destroying electrons. This leads to the damaging of cells, proteins, and DNA. It is impossible for us to avoid damage by free radicals. Environmental factors such as pollution, radiation, cigarette smoke, alcohol, sunlight, strenuous exercise and herbicides create free radicals. Normally, the body can handle free radicals, but if antioxidants are unavailable, or if the free-radical production becomes excessive, damage can occur. Unfortunately, our antioxidant systems are not perfect. As we age, cell parts damaged by oxidation accumulate.
Antioxidants are molecules which can safely interact with free radicals and terminate the chain reaction before vital molecules are damaged. Antioxidants work in the body by neutralizing and eliminating free radicals. Research has shown that free radicals can destroy tissue at the cellular level and are also precursors to many diseases including coronary artery disease. Many studies have shown the link between free radicals and a number of degenerative diseases associated with aging. Thus, it is possible that antioxidants can be beneficial in reducing the incidence of:

Cardiovascular disease
Cognitive impairment

Immune dysfunction
Macular degeneration
